Program Abstract

Commercial kitchens contain complex systems for cooking, ventilation, and fire suppression that are not encountered in residential kitchen fires. Investigating fires involving a commercial kitchen requires a sound foundation of knowledge in how these kitchens, their systems, and their components work. This module defines a commercial kitchen and describes the design, construction methodology, components, and operation of its ventilation, fire suppression, and cooking energy systems. The module concludes with discussion of how to pre-plan for investigations involving commercial kitchens.
